We finally hopped on the sweet potato toast bandwagon and let’s just say, it’s great to be here! You may have seen some of these delicious looking slices scrolling through your newsfeed or in a magazine, and yes! They’re just as delicious as they look. We absolutely love this idea for healthy breakfast or a snack since it’s super easy to make, nutritious and there’s so many ways you can try it! Did we mention that you can just make them in the oven at 450 degrees F for 20 minutes (turning halfway) as well as easily in your toaster (who knew?).
Sweet potatoes pack some impressive health benefits while making a sturdy “toast-like” base. They have a powerful nutritional punch and are a rich source of fiber as well as being easily digestible. Sweet potatoes are high in minerals including iron and calcium, as well as being a good source of Vitamins B and C. One of the key nutritional benefits from sweet potatoes is that most of the Vitamin A is in the form of beta-carotene (where the orange color comes from) that acts as an antioxidant and can boost your immune function.
