Making Nutrient Dense Treats While Satisfying a Sweet Tooth

Over the past 12 years that I have worked for Erin I have learned quite a bit about healthy eating and how even small changes can make big differences. Even though I grew up with a Mom who wouldn't let us eat sugary cereals and always made sure there was a helping of vegetables and a glass of milk at dinner, as an adult I realize it could be more than that - and it didn't have to be complicated! Some of my favorite things I've learned are how to use more nutrient dense ingredients to increase the "good stuff" my body needs while not depriving my sweet tooth.

After moving the Bakery to our new location we added bulk baking ingredients as one of our offerings in our Retail Store. When I saw the puffed quinoa I knew that it had all these great health benefits but really what it came down to was "what do I do with it?" So before the customers started asking I decided to find an answer myself! After a quick search online and a few tweaks I found exactly what I wanted - Puffed Quinoa Peanut Butter Balls. It was simple, quick and yummy. Because as a single mom if it's not simple and quick I'm not going to do it and if it doesn't taste good my son is not going to eat it. It was a hit for us and I think if you try it will be a hit for you too!

Puffed Quinoa Peanut Butter Ball Ingredients

Puffed Quinoa Peanut Butter Balls Recipe

Ingredients:

  • 1 c peanut butter
  • 4 T honey
  • 1 t vanilla
  • 2 c puffed quinoa
  • 1/2 c chocolate chips

Directions:

Mix peanut butter, honey and vanilla in a glass bowl. Heat in microwave approx. 20 seconds to soften. Add puffed quinoa and chocolate, mix well. Use a small cookie scoop or 1-2 T rolled in your hands to make balls. Refrigerate about 10-15 minutes to firm up. Makes 18 yummy (and healthier!) treats.
