Chipotle Kale Chips will Amaze the Pickiest of Eaters

Kale is a standard staple vegetable in my crisper drawer because it is simply too powerful to ignore. It's inexpensive, stores well, easy to grow and readily available in grocery stores. I heard about Kale years before I started eating it, like 'collard greens' it sounded like something that you find cooked until unidentifiable in some southern dish with bacon! I actually started feeding it to my dogs first as part of their raw diet so I had it in the fridge. As I heard more about this SUPER FOOD I started adding it to soups, salads and sautes, then I discovered the "hand frying" technique and how to make Kale Chips. I can happily say that I am now officially in love with Kale... we just needed to get to know each other!

Kale's nutrient richness stands out in three particular areas: antioxidant nutrients, anti-inflammatory nutrients and anti-cancer nutrients. Kale's cancer preventive benefits have been clearly linked to its unusual concentration of two types of antioxidants, carotenoids and flavonoids. One cup of Kale provides more vitamin K than any of our 135 world's healthiest foods and is a very high source of vitamin A and vitamin C.

There are several different types of Kale and you should try all of them to find the one you like best. Some are curly leaf and some are flat leaf... I prefer the flat leaf. Usually whatever the store has is what I bring home but I do have my favorite! I turned my husband's attitude towards Kale when I served him Chipotle Kale Chips. Want to do the same for your family?

Here is my Chipotle Kale Chips Recipe:

Wash and dry two bunches of Kale, then cut or tear leaf off of stem into bite size pieces. Toss Kale pieces into a large mixing bowl with 1 TBS Extra Virgin Olive Oil and a sprinkle of sea salt, mix with your hands to coat Kale pieces evenly with the EVOO. Arrange on baking sheet in single layer and bake at 350* for 10-12 minutes. When cooling sprinkle with chili powder and allow to cool completely. Try any other spice you can think of next!
